Peanut Butter Banana Chocolate Chip Protein Bars

ingredients

Bananas
1/2 Cups
Liquid Coconut Oil
1/3 Cup
Maple Syrup
1 Cup
Teddie Peanut Butter
1 Cup
Oat Flour
1 Cup
Vegan Vanilla Protein Powder
1 1/2 tsp
Baking Powder
1/2 Cup
Dark Chocolate Chips

instructions

  1. Combine all wet ingredients.
  2. Mix in flour and baking powder.
  3. Fold through dark chocolate chips and add to a greased 8×8 baking dish.
  4. Bake at 350°f for about 35 minutes (or until cooked and the clean toothpick test)
  5. Let cool then slice and enjoy! You can store these in the fridge for longer shelf life.

Easy Chicken Satay

Grilled chicken with satay sauce and crushed peanuts on top

ingredients

1 lb
Chicken tenderloins
2 tbsp
Coconut aminos
2
Limes
1 tbsp
Honey
1 tbsp
Sriracha
1 tbsp
Fresh ginger
2
Cloves of garlic

instructions

Marinade

  1. Keeping the chicken seperate, combine all ingredients in bowl and mix well. Then, add chicken to marinate and let sit for at least 1 hour or leave refrigerated overnight.

Low Sodium chicken broth
1/3 cup
Teddie Peanut Butter – Smooth
1 tbsp
Honey
1 1/2 tbsp
Sriracha
1 tsp
Fresh ginger

Cloves of garlic
1 Lime
Just the juice
1 Small handful
Fresh chopped cilantro (garnish)
1 Small handful
Chopped peanuts (garnish)

instructions

Peanut Sauce

  1. Over medium heat, add chicken broth, peanut butter, honey, Sriracha, ginger and garlic. Whisk to combine, bring to simmer, and continue to stir 4-5 more minutes over low heat until sauce thickens. Remove from heat, add lime juice

Assemble

  1. Chicken: Grill over high heat 2-3 mins / side. You can also cook the chicken in a pan using 1 tbsp olive oil to coat pan. Arrange chicken on platter, add crushed peanuts, and cilantro. Dip into peanut sauce.
  2. Rice bowl: ½ c prepared rice of choice, layer sliced cucumbers and carrots, add chicken on top, drizzle 2 tbsp sauce on top.

Guilt-Free Granola

Overripe bananas

Medjool dates
¼ cup
Teddie Smooth Peanut Butter
1 tbsp
Vanilla extract
2 tsp
Cinnamon
¼ tsp
Sea salt
3 cup
Rolled oats
¾ cup
Walnuts/cashews (any nuts, really)
½ cup
Hemp seeds

instructions

  1. Preheat the oven to 300°. Line a baking sheet with parchment paper.
  2. Place the bananas and pitted dates in a food processor and blend on high until smooth.
  3. Add Teddie Smooth Peanut Butter, vanilla extract, cinnamon and salt.
  4. Blend until smooth and well combined.
  5. In a large bowl, toss together the oats, nuts and hemp seeds.
  6. Pour the banana/date blend on top and mix until the oat mixture is well coated.
  7. Spread the mixture evenly on the lined cookie sheet and bake in the oven for 30 minutes.
  8. After 30 minutes of baking, take the granola out of the oven and use a spatula to flip and mix the granola to ensure even baking.
  9. Return to the oven and bake for another 20 minutes.
  10. The granola should be golden brown.
  11. Remove from the oven and let cool to room temperature on the cookie sheet before transferring to a storage container. (Important to let cool for crunchy granola!). Enjoy!
